
Corn and Avocado Salad
Serves 4
• 2 Cups Corn Niblets
• 2 Avocados, pit removed and diced
• 2 Roma Tomatoes, diced
• 1/2 English Cucumber, sliced
• 1 Red Pepper, seeded and diced
• Fresh Parsley, optional
Chipotle-Pineapple Dressing
• 1/4 Cup Chipotle Olive Oil
• 2 Tbsp. Fresh Lime Juice
• 2 Tbsp. Pineapple White Balsamic
• 1/2 Tsp. Ground Cumin
• 1/2 Tsp. Dried Oregano
• Himalayan Pink Salt and Freshly Ground Black Pepper to taste - optional
1. To a serving bowl, add the corn niblets, avocado, tomatoes,
cucumber, and red pepper.
2. In a small dish whisk the dressing ingredients together.
3. Toss the dressing with the vegetables.
4. Season with salt and pepper and garnish with fresh parsley, if using.
5. Enjoy immediately.
